With Tuesday we fell into a familiar routine that we followed on our trips to Guanajuato: Strolled around the city in the morning, located a good bakery to buy pastries and fruit for the following morning, returned home for a nap, then set out in the afternoon for another stroll. We briefly visited one of the most famous landmarks of Oaxaca, the Templo de Santo Domingo de Guzman, a magnificent cathedral inaugurated in 1572 and completed in 1724. The exterior is in an unassuming Baroque style architecture while the interior is a stunning display of intricately detailed space with every inch of surface covered in gold leaf.

Eventually we ended up at a restaurant which as it turn out is rather exceptional. “Los Danzantes” has received two Michelin stars recently: one for general culinary excellence and the other, a green star for being exceptionally eco-friendly. They have an organic farm outside of town where they grow all their vegetables and produce.

Paula’s meal was described as: “Butter-Roasted Cauliflower, Red Vegan Pipián, Quintoniles, Roasted Pepitas.”  While mine was: “Ancho Pepper Stuffed with Huitlacoche, Tamala Pumpkin Pureé, Goat Cheese, Baby Salad Greens from our Orchard.”

Considering the attentiveness of the wait staff and the overall ambiance and food preparation, it is easy to see why they received the Michelin awards.
